- Carrot (3 oz)
- Kale (4 oz)
- Cannellini Beans (1 unit, drained and rinsed)
- Lemon (1 unit)
- Cornstarch (1 tbsp)
- Cream Sauce Base (4 oz)
- Chicken Stock Concentrate (2 units)

Step-by-Step Instructions
Prep the Veggies- Wash and dry all produce.
- Trim, peel, and halve the carrot lengthwise; slice into half-moons.
- Remove and discard any large stems from the kale, then chop the leaves into bite-size pieces.
- Drain and rinse the cannellini beans.
- Quarter the lemon.
- Cook the Sausage & Veggies
- Heat a drizzle of cooking oil in a large pot over medium heat.
- Add the chicken sausage, pressing it into an even layer.
- Cook undisturbed for 2–3 minutes until browned on the bottom.
- Break up the sausage into pieces, then add the carrot, kale, and ½ tsp salt.
- Cook, stirring occasionally, for 3–4 minutes or until the sausage is cooked through, the carrot is slightly softened, and the kale begins to wilt.
- Build the Soup
- In a small bowl, stir together 1 tbsp cornstarch and 1 tbsp water until smooth (no lumps).
- Add the chicken stock concentrates, cornstarch mixture, half the cannellini beans, and 1½ cups water to the pot.
- Using the back of your spoon, partially mash the beans to help thicken the broth.
- Cover the pot and bring to a boil, then immediately reduce to a low simmer.
- Cook for 3–5 minutes, stirring occasionally, until the kale is wilted and the broth has slightly thickened.
- Finish & Serve
- Stir in the cream sauce base, the remaining cannellini beans, and a generous squeeze of lemon juice.
- Warm through for 1–2 minutes. For a thinner consistency, add an extra splash of water.
- Season with salt and pepper to taste.
