Step-by-Step Instructions
- Char the Pepper: Preheat oven to 240°C/220°C fan/gas mark 9. Halve the bell pepper and discard the core and seeds. Cut into thin wedges. Place on a baking tray, drizzle with oil, season with salt and pepper, then bake on the top shelf until soft and slightly charred, 14-16 minutes.
- Fry the Chicken: Heat a drizzle of oil in a medium frying pan over medium-high heat. Once hot, add the diced chicken. IMPORTANT: Wash hands and equipment after handling raw chicken. Stir-fry until golden brown and cooked through, 8-10 minutes. Chicken is cooked when no longer pink in the middle.
- Build the Flavour: Meanwhile, peel and grate the garlic (or use a garlic press). Add garlic and peri peri seasoning to the chicken and fry for 1 minute.
- Finish the Prep: While the chicken cooks, trim the baby gem, halve lengthways, then thinly slice. Grate the cheese. In a small bowl, mix together mayonnaise (see ingredients) and sweet chilli sauce.
- Warm the Tortillas: A couple of minutes before serving, place tortillas onto a baking tray and into the oven to warm through, 1-2 minutes.
- Finish and Serve: Lay the tortillas onto serving plates (3 per person). Spread each with sweet chilli mayo, then top with baby gem, charred pepper, and peri peri chicken. Finish with grated cheese.
Chef’s Tip
For an extra crispy texture, lightly toast the tortillas on a dry pan before serving.
