  • Basmati Rice (150 g)
  • Cardamom Pods (1)
  • Shiitake Mushrooms (50 g, sliced)
  • Chinese Leaf (120 g, chopped)
  • Garlic (1 clove, minced)
  • Ginger Purée (½ sachet or about 1 tsp)
  • Ketjap Manis (25 g)
  • Soy Sauce (25 g)
  • Coriander (1 small bunch, roughly chopped)
  • Lime (½, zested and sliced into wedges)

Step-by-Step Instructions

1. Cook the Pork

  1. Fill and boil your kettle for the rice.
  2. Heat 1 tbsp oil in a frying pan over high heat.
  3. Add the pork mince and cook for 5 minutes, breaking it up with a spoon, until browned.

2. Cook the Rice

  1. Meanwhile, fill a saucepan with the boiling water from your kettle.
  2. Add the cardamom pod and ¼ tsp salt.

  2. Chop or tear the Chinese leaf into bite-size pieces.
  3. Peel and mince the garlic (or use a garlic press).
  4. Zest the lime, then cut it into wedges.
  5. Roughly chop the coriander (stalks and all).

4. Stir-Fry the Veg

  1. Add the shiitake mushrooms and Chinese leaf to the pan with the browned pork.
  2. Stir-fry for 3-4 minutes, or until the Chinese leaf is softened.
  3. Stir in the garlic and ginger purée and cook for 1 minute, letting the aromas develop.

5. Sauce It Up

  1. Pour in the ketjap manis and soy sauce.
  2. Stir and bring to a boil, then reduce the heat slightly to allow the sauce to thicken—this should only take a minute or so.
  3. Squeeze in a bit of lime juice to taste.
  4. Stir in half the coriander and remove the pan from the heat.

6. Serve

  1. Return the drained rice to the saucepan, then stir in the lime zest.
