Step-by-Step Instructions

  1. Start the Prep: Bring a large saucepan of water to a boil with 0.25 tsp salt. Halve thick broccoli stems, trim and cut green beans into thirds. Peel and grate garlic. Halve the lime.
  2. Cook the Noodles and Veg: Add noodles, green beans, and broccoli to the boiling water. Cook for 4 minutes, then drain and rinse under cold water.
  3. Make Your Peanut Sauce: In a jug, mix boiled water, ketjap manis, soy sauce, peanut butter, and sugar. Stir well and set aside.
  4. Bring on the Prawn Stir-Fry: Heat oil in a pan over medium-high heat. Drain the prawns. Cook prawns and coleslaw mix for 2-3 minutes. Add red Thai paste and garlic, stirring for 1 more minute.
  5. Combine and Stir: Pour the peanut sauce into the pan and mix well. Add the cooked noodles and vegetables, stirring to coat. Simmer for 1-2 minutes until slightly thickened. Ensure prawns are fully cooked.
  6. Garnish and Serve: Divide between bowls. Crush peanuts and sprinkle on top. Serve with lime wedges.
