- Salmon Fillets (250 g total)
- Yellow Potatoes (350 g, quartered)
- Red Onion (½, sliced for pickling)
- Gala Apple (1, thinly sliced)
- Dill (7 g, chopped)
- Baby Spinach (56 g)
- White Wine Vinegar (1 tbsp)
- Whole Grain Mustard (1 tbsp)
- Honey (1 sachet or tbsp)
- Dill-Garlic Spice Blend (4 g)

- Oil (1 tbsp)
- Butter (1 tbsp)
- Salt (¼ tsp)
- Pepper (⅛ tsp)

Step-by-Step Instructions
Cook Potatoes
- Boil potatoes in salted water for 10–12 minutes, until fork-tender.
- Drain and set aside.
Pickle Onions
- In a small pot, simmer sliced onions with vinegar, half the honey, and a splash of water.
- Once flavors meld, transfer onions and liquid to the fridge to cool.
Cook Salmon
- Pat salmon dry; season with salt, pepper, and Dill-Garlic Spice Blend.
- Pan-sear skin-side down in 1 tbsp oil over medium heat for 4–5 minutes until skin is crispy.
- Flip and cook another 3–4 minutes or until salmon is cooked through.
- Remove from heat; mix mustard with remaining honey and spread onto the salmon.
