Step-by-Step Instructions
- Prep: Adjust the oven rack to top position and preheat to 425 degrees. Wash and dry all produce. Trim, peel, and cut carrots into 1-inch-thick pieces. Dice potatoes into ½-inch pieces, and slice the onion and mushrooms.
- Cook Carrots & Mash: Toss carrots with oil, salt, and pepper on a baking sheet and roast until browned and tender, about 25-30 minutes. Boil potatoes until tender, about 15-20 minutes, then mash with sour cream. Keep covered off heat.
- Caramelize Onion: Cook onion in oil until browned. Add sugar and water, cooking until caramelized. Transfer to a bowl and set aside.
- Cook Steak: Season steak with salt and pepper. Cook in the same pan as onions to desired doneness, 3-6 minutes per side. Let rest.
- Make Sauce: In the same pan, add butter and mushrooms, cooking until softened. Stir in garlic, demi-glace, and water, then mustard. Simmer until thickened.
