Turkey Chili and Baked Potato Bowls

- Ground Turkey (250 g)
- Yellow Potato (350 g)
- Green Bell Pepper (1)
- Tomato (1)
- Green Onion (1)
- Cheddar Cheese, shredded (½ cup)
- Sour Cream (1 small container)
- Tomato Sauce Base (2 tbsp)
- Tex-Mex Paste (1 tbsp)
- Oil (2 tbsp)
- Salt (¼ tsp)
- Pepper (⅛ tsp)

Prep & Roast Potatoes
- Preheat oven to 450°F (230°C).
- Rinse and cut yellow potatoes into 1-inch pieces.
- Toss with 1 tbsp oil, salt, and pepper on a parchment-lined baking sheet.
- Roast for 22-24 minutes, flipping halfway, until golden.

Prep Vegetables
- Core and dice green bell pepper into ½-inch pieces.
- Dice tomato into ¼-inch pieces; season lightly.
- Thinly slice green onion.

Start Turkey
- Heat 1 tbsp oil in a large non-stick pan over medium-high.
- Add ground turkey, breaking it up, and cook for 2 minutes until it begins to brown.

Cook Turkey & Peppers
- Add diced peppers; season with salt and pepper.
- Cook for 3-4 minutes, stirring, until turkey is cooked through (no pink remaining) and peppers soften.

Make the Chili
- Reduce heat to medium-low. Stir in tomato sauce base and Tex-Mex paste.
- Pour in ½ cup water. Simmer for 3-5 minutes until slightly thickened.
- Adjust seasoning if desired.

Assemble & Serve
- Divide roasted potatoes into bowls.
- Top with turkey chili, shredded cheddar, tomatoes, sour cream, and sliced green onions.
- Enjoy immediately!
